Cedar Syrup Recipe

Thuja Occidentalis, Eastern White Cedar


This delicious syrup will pair great with some lemon or lime and soda water. You can add it to your favourite whiskey or gin & tonic, yum!


1 small handful cedar

1 cup boiling water

1 cup sugar


Instructions:

  1. Cut cedar leaves into smaller pieces and then place in a heat proof container.

  2. Pour boiling water over and cover the container (I use a mason jar lid and gently place on top)

  3. Steep for 30 minutes - 24 hours

  4. Strain into a saucepan

  5. Add sugar

  6. Bring to simmer over medium-low heat, stirring frequently to dissolve sugar. Simmer an extra minute.

  7. Remove from heat and allow to cool.

  8. Bottle, label and store in refrigerator for 3-4 weeks.


Yields: 1 cup

Do not consume if pregnant or breastfeeding.
